Ingredients

  • 1 large leek (trimmed, washed & sliced)

  • 2 Tbs Butter

  • 1L Vegetable (or chicken) stock

  • Salt (to taste)

  • 4-5 medium potatoes (washed, peeled, quartered & cubed)

  • 1 cup heavy cream

  • Croutons (optional)

Prep time: 10 minutes / Cooking time:30-35 minutes

You will need the following items and utensils: Stock pot w/lid, Kitchen knife, vegetable peeler, wooden spoon, stick blender (or food processor / liquidiser)

First, make sure to carefully trim, thoroughly wash, and finely slice the leek to prepare it for cooking. Next, in a generously sized pot, gently melt the butter on medium heat. Once the butter is melted, add the prepared sliced leeks and cook them until they become softened and slightly translucent.

Proceed by pouring in either vegetable or chicken stock and bringing it all to a hearty boil. Add in the cubed potatoes and season the mixture with a pinch of salt. Cover the pot, reduce the heat and let it gently simmer for approximately 30 minutes, or until the cubed potatoes reach that ideal fork-tender consistency. Turn off the heat.

Use a stick blender or an immersion blender to puree the contents until a velvety smooth texture is achieved. Pour the heavy cream into the mix, blending until fully incorporated. Allow everything to simmer a tad longer if necessary.

To serve up this delicious soup, ensure it's piping hot (or chilled for a vichyssoise) and consider garnishing it with a sprinkling of crispy croutons and/or freshly chopped chives for an added touch of flavour and visual appeal.
