Banana Bread

Wondering what to do with over ripe bananas? Don’t throw them out! Make this delicious, moist, simple recipe for an amazing banana bread loaf with minimal effort.
Ingredients:
1/2 cup unsalted butter, melted
3 very ripe bananas, mashed
1 large egg
1 teaspoon vanilla extract
3/4 cup white granulated or caster sugar
1 3/4 cups all-purpose flour, sifted
1/2 teaspoon baking soda
Pinch of salt
1 teaspoon ground cinnamon
1/2 cup roughly chopped pecans (optional)

You will need the following items and utensils: Large mixing bowl, small saucepan, fork, wooden spoon, spatula, kitchen knife, loaf pan, parchment paper
Preheat the oven to 350°F (175°C). Melt the butter in a small saucepan over low heat.
In a large mixing bowl, use a fork to the mash the bananas, then slowly add the melted butter and stir to combine. Add the egg to the bowl, break the yolk, and stir to combine. Add the vanilla extract. Next, stir the sugar (use more or less depending on taste) into the wet ingredients, combining well.
Add the baking soda, salt, and cinnamon to the sifted flour, cutting it in to combine. Gradually, add the combined dry ingredients into the wet, and stir until just combined. Do not over mix! Hint: This can be done on the parchment paper reserving it after to line the loaf tin instead of using a second bowl.
Roughly chop the pecans, if using, or you may substitute chocolate chips, raisins, other dried fruits, or whatever you have on hand. Gently fold into the batter.
Grease and partly line a 9x5-inch loaf pan with the reserved parchment paper. Using a spatula, pour the batter into the prepared loaf pan and spread it out evenly.
Bake for 55-60 minutes, or until a toothpick inserted into the centre comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring it (using the parchment) to a wire rack to cool completely. Slice as desired.
