Simply Delicious Rustic Apple Cake
Ingredients:
For the Cake:
4 apples (peeled, cored, & chopped)
1 apple (halved, cored, & sliced into half circles for the top)
3 large eggs
1/2 cup (100g) granulated sugar
1 pinch of salt
1 cup (240ml) whole milk
1/4 cup (60ml) vegetable oil
1 1/4 cup (150g) all-purpose flour
2 1/2 tsp baking powder
1 tsp vanilla extract
Zest & Juice of a lemon
1 tsp ground cinnamon
1 tsp nutmeg (freshly grated)
For the Cake:
2 tbsp melted butter
1 tbsp granulated sugar
Instructions:
Preheat the Oven:
Preheat your oven to 180°C (350°F). Line the bottom and sides of a 9-inch (23cm) springform pan with parchment paper.Prepare the Apples:
Peel, core, and chop 4 apples into small cubes. Add the zest and juice of a lemon. Set aside.
Halve the remaining apple, core it, and slice it into thin crescents for the top.
Mix the Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and freshly grated nutmeg.Prepare the Batter:
In a large mixing bowl, whisk the eggs and sugar until pale and slightly fluffy (about 2 minutes).
Add the milk, vegetable oil, and vanilla extract. Stir until well combined.
Gradually add the dry ingredients to the wet mixture, stirring gently until just incorporated. Do not overmix.
Fold in the Apples:
Gently fold the chopped apples into the batter, ensuring they’re evenly distributed.
Assemble the Cake:
Pour the batter into the prepared springform pan and spread it evenly.
Arrange the apple crescents on top in a circular pattern.
Add the Topping:
Brush the top with melted butter and sprinkle evenly with 1 tablespoon of granulated sugar for a golden, slightly caramelised finish.
Bake the Cake:
Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted into the centre comes out clean. The top should be golden brown.
Cool and Serve:
Let the cake cool in the pan for 10–15 minutes. Then remove the springform ring and let it cool completely on a wire rack before slicing.
Serving Suggestions:
Dust with powdered sugar before serving for an extra touch of elegance, or pair with whipped cream or vanilla ice cream.
