  • 1 lb (450 g) elbow macaroni

  • 4 cups (950 ml) shredded sharp cheddar cheese

  • 2 cups (475 ml) shredded mozzarella cheese

  • 4 cups (950 ml) milk

  • 4 tbsp (60 g) unsalted butter

  • 4 tbsp (30 g) all-purpose flour

  • 1 tsp (5 g) salt

  • 1/2 tsp (2 g) black pepper

  • 1/2 tsp (2 g) paprika (optional)

  • 1/4 tsp (1 g) garlic powder (optional)

  • 1/4 tsp (1 g) onion powder (optional)

  • 1/2 cup (60 g) grated Parmesan cheese

  • 1 cup (100 g) breadcrumbs (optional)

  • 2 tbsp (30 g) melted butter (optional, for breadcrumb topping)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Cook Macaroni: Bring a large pot of salted water to a boil. Add the macaroni and cook until al dente, according to package instructions. Drain and set aside.

  3. Prepare Cheese Sauce: In a large saucepan, melt 4 tbsp of butter over medium heat. Stir in the flour and cook, stirring constantly, for about 1 minute to form a roux.

  4. Add Milk: Gradually whisk in the milk, making sure to eliminate any lumps. Continue cooking and stirring until the mixture thickens and begins to bubble.

  5. Add Cheese: Reduce heat to low and stir in the cheddar and mozzarella cheeses until completely melted and smooth. Season with salt, black pepper, paprika, garlic powder, and onion powder (if using).

  6. Combine Macaroni and Cheese Sauce: Add the cooked macaroni to the cheese sauce, stirring until well combined.

  7. Transfer to Dish: Pour the macaroni and cheese mixture into a greased 9” x 13” casserole dish.

  8. Add Topping (Optional): In a small bowl, mix the breadcrumbs with melted butter. Sprinkle this mixture evenly over the top of the macaroni and cheese.

  9. Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the sauce is bubbling.
