Flan de Naranja (Orange Flan)
Ingredients:
For the Caramel:
3/4 cup (150g) granulated sugar
For the Custard:
4 large eggs + 1 extra yolk
1/2 cup (100g) granulated sugar
1 cup (250ml) whole milk
1 cup (250ml) heavy cream
Zest of 1 bitter orange (finely grated)
1/3 cup (80ml) fresh orange juice
1 tsp (5ml) pure vanilla extract
Instructions:
Make the Caramel: Heat the sugar in a heavy-bottomed pan over medium-low heat, swirling occasionally until it melts and turns deep amber. Quickly pour into a flan mould, tilting to coat the bottom.
Prepare the Custard: In a bowl, whisk together the eggs, yolk, and sugar until slightly thickened. Stir in the orange zest. Gently whisk in the milk, cream, orange juice, and vanilla.
Bake the Flan: Pour the custard through a fine sieve into the caramel-coated mould. Place in a baking dish and add hot water halfway up the sides for a bain-marie. Bake at 300°F (150°C) for 50–60 minutes, until just set with a slight jiggle.
Chill and Serve: Cool to room temperature, then refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges, place a plate on top, and invert the flan to release it with its caramel sauce.
